I may be totally wrong in my method, but I usually can pick through the rocks (after crushing it) and find the ones that are yey and the ones that are cut. If I crush it and
- it's sort of mooshes down (i.e. pieces don't go flying everywhere when you crush down with a card)
- feels kind soft and sticky
- when you chop it, it seems difficult to get into a finer powder, i.e. kinda sticky
- and you don't have to "chop" it (using up and down motion) and you can "slice" it (back and forth) it should be mostly blow and not cut.
Every time I have sorted through the rocks like that, I can usually separate the blow from the cut. If it's just the powder, after so many times doing it, I can just tell the cut from the coke. It's hard to explain what it looks like visually, but if you examine the powder you can usually see the difference in texture, color, etc.
If you aren't sure about little rocks, a method of testing whether it's coke or cut is to put it under your tongue and if it dissolves instantly, it should be coke, if it doesn't, it's cut.
As for the quality, imo it's hard to tell by looking, I judge by how I feel after doing it.
